The one and only Alicia Silverstone came up with this vegan recipe, and you can change it however you like!
I used spinach because I already had some that needed to be used up, but I’ll definitely try kale the next time.

Simple seasoning and a splash of clam juice are added to a rich tomato base for Manhattan clam chowder.

Manhattan clam chowder is a favorite soup for summertime outdoor dinners, especially waterside meals when the going is easy.

It’s just a matter of taste, but I prefer to puree the beans in this soup because it thickens it and you can barely tell that they are there.
Using the rind from a wedge of Parmesan or Romano cheese gives this soup a special touch.
If you don’t have one, add some grated cheese to the soup as it cooks. I always keep them in my freezer just for soups.
