Chilaquiles are a popular Mexican morning dish. This meal is simple, delicious, and only takes 30 minutes to prepare! Crispy fried tortilla chips are tossed in smokey red sauce and finished with a fried egg!

Traditional chilaquiles rojas are produced by sautéing and mixing diced onion, garlic, tomatoes, and dried guajillo chiles to make a smoky red sauce.

Once the sauce is produced, it is boiled in a skillet. The tortilla chips are then folded into the sauce until uniformly coated.

Our version today is chilaquiles rojas, which we’ve simplified by using canned tomatoes and chipotles in adobo sauce.

This allows you to avoid rehydrating, seeding, and toasting dried chiles while maintaining optimum taste.

Although I prefer Bob’s Red Mill, you may get both of these flours at the shop, but I typically prepare them at home in the food processor.
